Mim and I have been on a constant hunt for the best scone recipe. She shared this one with me over the summer, and we both just love it! They're really simple, but the buttermilk gives them a great taste.

Ingredients
2 cups flour
1/4 cup white sugar
5 tsp baking powder
1/2 cup butter (original recipe called for shortening - but we both use butter)
1 tsp vanilla extract
1 cup buttermilk
Directions
- Preheat oven to 400ยบ
- Sift flour, sugar and baking powder together.
- Cut in the butter, like you would for a pie crust.
- Combine the buttermilk and vanilla, then add it to the rest, mixing until just combined.
- Pat dough out with your hands, and cut into shapes. I usually divide the dough in two, pat them down to desired thickness, and cut each disk into 6 wedges. Mim suggests letting them sit (and rise a bit) 5+ minutes, before baking them.
- Bake for 15 minutes.
