Sambal Goreng Taotjo (Black Bean Sauce) - Tuan


“I really like hot stuff!”

Ingredients

1 cup black bean sauce
12 green hot peppers
16 green onions
laos (galangal)
Assem (tamarind), or lemon juice and sugar to taste
Goela djawa (Javanese brown sugar)
Kecap manis sedang (sweet soya sauce)

Directions

1. Using latex/plastic gloves to protect skin, cut up peppers in half lengthwise and remove seeds.
2. Mix with all other ingredients in a thick-bottomed pot and cook on stovetop over medium heat for 10 minutes.
