Roasted Loin of Pork in Ginger Marinade - Ingrid


Ingredients
2-2 ½ lbs boneless pork loin
1 clove garlic minced
1 3-inch piece of fresh ginger root, peeled and roughly chopped
2 tbsp soy sauce
2 tbsp tomato puree
1 tbsp wine vinegar
4 tbsp brown sugar
½ cup chicken or beef stock
Directions
1. Place pork loin in glass or ceramic dish, and blend remaining ingredients in a food processor or blender. Cover the pork with the marinade and
refrigerate overnight.
2. Bring pork to room temp and roast in a baking pan in a 350 oven for approx 1 hour, basting occasionally with marinade.
