“My kids’ favourite. Enjoy!” (Greta)
Ingredients
4 large potatoes (or 5 medium)
1 or 2 onions
3 eggs
½ cup flour
2 Tbsp baking powder
salt & pepper to taste
oil for frying
Directions
1. Grate potatoes and onions in food processor.
2. Mix potatoes and onions in a large bowl with eggs, flour, baking powder, salt (approx. 2 Tbsp) and pepper, until well blended.
3. Heat oil in heavy pan and drop potato mixture into oil with a large spoon. (I make 4 at a time.)
4. Fry on both sides till light brown & crisp.
5. Remove and drain on paper towels.
6. Serve as side dish with turkey, chicken or schnitzel, or as a snack with apple sauce.
