Peanut Sauce - Tuan


“I like hot stuff!”

Ingredients

6 Tbsp peanut butter
1 small piece of tamarind
4 shallots, chopped
garlic
1 tsp trassi (blachan)
lemongrass or grated lime rind
sambal (chilli sauce)
Goela djawa (Javanese brown sugar)
Kecap manis sedang (sweet soya sauce)
Coconut milk

Directions

1. In a thick-bottomed pot, melt peanut butter over medium heat.
2. Put tamarind in boiling water for 5 minutes. When soft, crush and strain…use liquid (or use lemon juice instead). Add this to peanut butter.
3. Add other ingredients, mix and simmer for 20 minutes.
