Typically served for breakfast the morning after one of the van der Sluis clan’s get-togethers (with lots of maple syrup).
Ingredients
3 eggs
1 cup flour
6 ounces plain yoghurt
1 cup milk
2 Tbsp sugar
1 tsp salt
2 tsp baking powder
1 tsp baking soda
4 Tbsp melted butter or oil
Directions
1. In a mixing bowl, beat eggs and add flour, yoghurt and milk. Beat until smooth.
2. Still beating add; sugar, salt, baking powder, baking soda, and melted butter or oil (not olive).
3. Let mixture stand on counter for 10 minutes, until bubbly.
4. Pour batter to thinly cover the bottom of an oiled thick frying pan (medium heat). Flip pancake when bubbles form on the surface. Brown other side.
