The BEST way to enjoy Opa's pancakes is with TONS of butter and sugar. Opa loved butter, and this was his excuse for eating More butter!
Ingredients
1 cup flour
1 tsp baking powder
1 tsp baking powder
Salt
2 eggs
2 cups milk (2%)
2 cups milk (2%)
Directions
1. Sift flour, baking powder and salt through the sifter.
2. Beat eggs in and add the milk into a smooth texture.
3. Continue to add milk (sometimes MORE milk - depending on the thickness of your crepe).
4. Put CAST IRON frying pan on medium heat and melt some butter.
5. The pan MUST be even temperature (HOT), then pour a soup ladle of batter to cover the bottom of the pan with a THIN layer.
6. Fry until golden. Flip pancake and cook other side. Be CAREFUL when turning pancake as it is thin.
7. Serve it with butter and sugar (JUST LIKE OPA).
8. Roll each pancake like a long cigar.
You can also serve these pancakes with maple syrup, corn syrup, molasses or your favourite condiment.
We were very spoiled with Opa's special recipe.
