I make a minimum of 24 jars every year. Although many ask for the recipe, it is much easier to have me make it… you can pick up a jar when at my place. Nathalie eats it with basically any meat, mostly chicken and pork. A lot of friends also like it with cheese and crackers.
Ingredients
1 red pepper
1 green pepper
8 hot banana peppers (preferably 4 red and 4 yellow)
1-1/2 cups cider vinegar
7 cups sugar
1 bottle or 2 plastic packages Certo

Directions
1. Chop peppers in food processor until quite fine, Drain
2. Measure 2 cups of pepper mixture into a large pot. Add vinegar and sugar, mix well.
3. Place on high heat, bring to a boil and boil hard for one minute, stirring constantly.
4. Remove from heat, sir in Certo, skim foam, cool 5 minutes and pour into sterilized jars.
Yield 6 to 8 five-ounce jars.
