Just can’t seem to get enough of these! Just as good frozen, but beware; they will quickly disappear…so you may want to make a double batch.
Ingredients
1 cup unsalted butter, softened
2 cups & 1 tsp of flour
½ cup of confectioner’s sugar
4 large eggs
2 cups of granulated sugar
1 ½ cups chopped walnuts (optional)
1 ½ cups chopped walnuts (optional)
grated rind of 1 large lemon
6 Tbsp lemon juice
½ tsp baking powder
Directions
1. Preheat oven to 325˚ F.
2. Grease a 9-in x13-in baking pan.
3. Beat together butter, flour (2 cups) and confectioner’s sugar until fluffy. Scrape mixture into the prepared pan and smooth into a thin layer covering the bottom.
4. Bake for 15 mins.
5. Meanwhile, beat the eggs and sugar until light. Add the lemon rind and juice and mix. Sprinkle in the tablespoon of flour and the ½ tsp of baking powder, and then pour in the nuts. Combine well.
6. Pour lemon mixture into crust and return to the oven to bake for another 35 mins, or until filling is set.
7. Let cool slightly, and then cut into squares. Loosen crust around the edges before removing squares from the pan.
