As a true meat lover, this recipe didn’t entice me much, but once I had it, it’s now one of my favourites. It will be yours too. Credits for this one go to Cindy Costa who first introduced it at a “Forest Street Neighbours” party.
Ingredients
2 to 3 lbs ground beef
1 large onion
2 to 3 stalks celery
2 to 3 cloves garlic
3 cans of brown beans (28 oz each)
3 cans of kidney beans (14 oz each)
½ cup of ketchup
1/3 cup of brown sugar
2 Tbsp soya sauce
2 Tbsp chilli or cayenne pepper (amount depends on how hot you like it…and some like it hot). 2 tbsp = med hot
2 cans pineapple tidbits (14 oz each)
Directions
1. Brown meat on stove top in a large pot, then remove meat.
2. Sauté onions and garlic in a little oil.
3. Mix onions, garlic, meat and all other ingredients. Bring heat up to almost a boil and simmer on low heat 3-4 hours.
That’s it. Enjoy with fresh baguette bread and butter, or with rice. Goes great with a porter beer during winter months, or an ice-cold lager at a summer BBQ.
