Egg in the Hole - Stephanie


“First of all, what an epic name for a recipe. Ask anyone who knows me, my cooking skills include a full knowledge of microwaveable combinations and take-out menus. However, I came to realize at an early age what a natural talent I have for cutting things, so carving a hole in a piece of bread is a superb way to exhibit my ability, my craft…if you will. Plus, there is nothing I love more than piercing the tender yolk for a runny gooey yellowy goodness only to mop it up with toast! Eat your heart out – Oprah’s book club!”

Ingredients

1 or 2 slices of whole wheat bread per serving
1 or 2 eggs per slice of whole wheat bread
One 2 1/2 inch circular cookie cutter
Knob of butter
1 Tbsp canola oil



Directions

1. Using cookie cutter, cut out a hole in the centre of whole wheat bread.
2. Pour 1 Tbsp of canola oil and one nob of butter into heated frying pan. When hot, place one slice of whole wheat bread in centre of heated pan and break one egg into hole, and fry on both sides till bread is golden brown and egg is cooked.
3. Transfer to plate, sprinkle on salt and pepper to taste and enjoy.
You can cook two eggs in the hole at once, if your pan is big enough
