Ingredients
Chicken thighs (boneless and skinless)
1 lemon
1 cup sour cream
½ cup honey
2-3 Tbsp curry powder
Fresh Mangoes or a small can of mandarins
Directions
1. Squeeze the juice of one lemon and rub it all over chicken thighs.
2. Mix sour cream, honey and curry together and pour over chicken. Marinade for several hours or overnight.
3. Cook on the BBQ on med-low heat until nicely browned. Once cooked, slice chicken thinly and serve with slices of fresh mangoes or mandarins.
Notes
· Plain yoghurt can be substituted for the sour cream.
· Use more or less honey and curry to taste.
· I have to confess, I have never measured out the ingredients before. As for the amount of mangoes… we like lots!
This is a family favourite and any leftovers make for a great sandwich the next day.
