Great snack and freezes well. Enjoy!
Ingredients
3-4 bananas, very ripe
1 cup sugar (half brown, half white)
2 eggs
1 Tbsp vanilla
½ cup butter
1 tsp baking soda
1 container plain yoghurt (or sour cream)
2 cups all-purpose flour
1 tsp baking powder
pinch of salt
1 cup semi-sweet chocolate chips
Directions
1. In food processor mix butter, sugars, eggs and vanilla for 1 min.
2. While blender is running, drop bananas in pieces, mix well.
3. In a large cup, mix yoghurt with baking soda and let sit for 2 min (it doubles in size). Add this to the banana mixture and blend.
4. Add flour, baking powder and salt. Mix well.
5. Add choc chips. Bake in loaf pan for approx. 50-60 min until done.
Also makes great muffins. Bake for 25-30 min. in muffin tins.
