Apple Pie - Roberto



Pie Crust Ingredients

1½ cups of all-purpose flour
½ cup of plain bleached cake flour
1/4 tsp of salt
2 tbs of sugar
1½ sticks chilled unsalted butter,diced
¼ cup of vegetable shortening
½ cup of ice water

Directions

1. Put flower, sugar and salt in food processor and pulse 5-6 times, to break up butter.
2. Add shortening, turn on machine and add 1 ½ cups of ice water immediately, and pulse 2-3 times.
3. Remove cover and feel dough it should look like a bunch of small lumps, and will hold together in mass when you press a handful together.
4. Place dough on counter top and kneed with heel of your hand, until it has a smooth texture.
This crust can be used for other pies or tarts.

Apple Pie Filling Ingredients

5-6 medium-large apples
¾ cup sugar
2-3 Tbsp of all-purpose flour
1 Tbsp of lemon juice
½ tsp ground cinnamon
1/8 tsp of salt


Directions
1. Place oven rack in the lower third of oven and preheat to 425oF.
2. Peel all apples and cut them into small pieces. Measure out six cups, put into bowl, and mix in all other ingredients, then wait 15 minute.
3. Put pie crust in pie plate. Put filing on pie crust and cover with excess pie crust.
4. Chop up a few pieces of butter put them on the top of the pie, and then sprinkle some cinnamon and sugar over the butter.
5. Cut some holes on the top, the put in oven for 30 minutes.
Serve hot with some ice cream.
