*ANZAC = Australia and New Zealand Army Corps
The name comes from the fact that during World War I, Australian women sent these cookies to their men stationed in Europe because the cookies can last a very long time before going stale – they’ll taste great for a few weeks – but we can’t seem to keep them for that long around our house.
Ingredients
2 cups flour
2 cups rolled oats
2 cups sugar
1 cup coconut flakes
2 sticks unsalted butter (1/2 pound)
2 Tbsp corn syrup or golden syrup
¾ tsp baking soda
¼ cup boiling water
Directions
1. Mix dry ingredients together: flour, oats, sugar and coconut.
2. In a small saucepan, melt together the butter and syrup.
3. In a cup, add the baking soda to the boiling water, and add to the butter mixture. CAREFUL, it will fizz quite a bit.
4. Add butter mixture to dry ingredients, stirring with a fork to blend.
5. Drop spoonfuls onto a cookie sheet about 2 inches apart.
Bake in a 350° F oven for 15 minutes.
